Time: 5 mins (prep 30mins before)
If you’re a smoothie-in-the-morning kind of person but are looking for a more substantial meal with a variety of textures, then this beetroot smoothie bowl is a great way to pack a whole lotta good into the best meal of the day.
1 whole medium-sized red beet, peeled
115g frozen raspberries
A handful of fresh greens (spinach, kale)
3 dried prunes, pre-soaked in 125ml water for half an hour
1 small orange wedge, including the zest (about ⅛ of a large orange)
1 teaspoon vanilla extract
125ml plant milk of choice
Stick everything in a food processor, even the water that you’re soaking your prunes in. Pulse a few times so the large chunks don’t cause the blender to splash bright red beetroot juice all over your kitchen (speaking from experience here). Blend on high for a couple of minutes until the texture is fairly smooth.

Granola for Gangsters - Almond, Cranberry & Pistachio
Scoop your nut butter out of the jar and smear it across the bottom of the bowl. This genius trick means that you avoid getting all of the nut butter in one sticky mouthful… instead you get delicious little bits in each spoonful as you scrape the bottom of the bowl. Pour in the yoghurt to form one layer, then pour in beetroot smoothie. Top with a generous helping of granola and you’ve got yourself one badass breakfast bowl!
